1Tbsp Olive oil
3-4 stalk celery chopped
1 small onion chopped
3 fresh garlic clove
2 bay leaf
64 oz low sodium chicken broth
32 oz tap water
3 tbsp red wine vinegar
2 cups of raw Pink Lentils
3 cups raw chopped spinach
12 oz of diced ham
Himalayan salt to taste
Cayenne pepper (optional)
lemon for garnish (optional)
In a large soup pan cook onion, celery and garlic in oil until soft, about 10-12 min.
Add water, chicken broth, bay leaves and pink lentils till simmer over medium heat for 30 min till lentil are soft.
Remove from the heat and with the hand blender mash all the vegetables till get a smooth consistency (creamy).
Then add spinach and ham and cook for another min or two, just until spinach is wilted.
Remove from heat and add salt, pepper and red wine vinegar, stirring to combine .
Notes:
I cook a good amount to have for a week in this cold weather or can be frozen too,
